The inaugural selection of the Kneady Chefs baking club this month was red velvet cake. Finding a recipe in all of my cookbooks turned out to be more difficult than I thought! Given that it is a traditional southern dessert I had success with Paula Deen! I ended up nixing both of the Paula Deen recipes (16 serving cakes are just too much for the two of us) and opted for cupcakes instead (easier to eat and easier to share!)!
The recipe that I ended up selecting was red velvet cupcakes with cream cheese icing from Cupcakes by Shelly Kaldunski. After starting the recipe I found one glaring error. No mention in the recipe directions of when to use that single room temperature egg that was included in the list of ingredients. Proof-reader missed that one!
These cupcakes turned out beautifully! The texture of the cake was perfect and the icing had such a guilty taste! They were so good that Joe was taking 2 a day to work 🙂 I’ll definitely make these again, so glad the first choice of the group was red velvet because I might never have tried them otherwise!
