I can’t believe it has been so long since I have posted! The end of winter has been very hectic in our household but there is no time like Easter to get back on track!
I baked the coconut lime tea cake for Easter Sunday’s dessert and it was just perfect! The lime was very noticeable and the cake was so moist and so fluffy at the same time- a really great ending to a delicious Easter meal! As far as the other options went, I opted for the sweetened coconut & definitely the dark rum (considering I have 2 bottles of it over here!)
