TWD: Chockablock Cookies

This week’s recipe was selected by Mary of Popsicles and Sandy Feet. I highly suggest that you head over there for the recipe because these cookies are so versatile!

Like many of the other bakers, I left out the shortening and used additional butter instead. I did find the molasses to be fairly strong though both in smell and taste so the next time I make these cookies I will sub in brown sugar instead. I opted for peanuts and a tropical dried fruit mix (papaya, pineapple & ┬ámango from the Sun Maid Tropical Trio pack). I really wasn’t sure how the tropical fruit would work out but I wanted to give it a try because of the coconut! Turns out it was delicious! We ate a few cookies and then I froze half the batch. My husband was very hesitant to try the cookies but he really enjoyed them (although he had to think about it again after he found out what the ingredients were!). He thought these would be great to take along hiking.
